Ingredients
2 Slices of whole wheat brown bread
Home made Moroccan style hummus
Thinly sliced half a red onion
A handful of thinly sliced mushrooms
Cherry tomatoes sliced in half
A handful of raw spinach
garlic powder or the size of half of a thumbnail of thinly fresh garlic clove
1 tsp of cumin seeds
1 tsp of olive oil
half an avocado
A handful of canned chick peas
1tsp of paprika
Half a lemon
Ground white pepper if not available grounded black pepper will do
Salt to taste
Preparation
Start making your home made hummus blend the; avocado, chick peas, olive oil, cumin seeds, paprika, 1 tsp of garlic powder or half the thumbnail sized garlic clove, salt to taste and freshly squeezed lemon juiced from your half a lemon. Blend until smooth, gradually add canned chick pea water if necessary for a smooth butter like consistency.
Then sauté; half a portion of the thinly sliced onions, thinly sliced mushrooms and black pepper or white pepper on medium to high on a non-stick pan for about 10 minutes until onions are translucent. When done, remove cooked onions and mushrooms off the pan, quickly wipe with paper towel add some oil on the pan and sauté your other half a portion of onions and half a tsp of garlic powder or half thumbnail sized garlic clove . Saute for 10 minutes on medium to low heat, cover the pan in-order to sweat the onions. Toast your bread as desired.
Time to assemble!!!!!, take your two toasted whole wheat slices of bread generously spread hummus on each of them. On one toast place your spinach, cooked onions and mushrooms and on the other place your sweated onions with garlic and sliced cherry tomatoes then serve!!. Enjoy!!!!
